Vancouver Dining:
A Delicious Selection of Vancouver Restaurants

Shaughnessy Restaurant at VanDusen Garden

Vancouver Dining: Shaughnessy Restaurant at VanDusen Garden
Shaughnessy Restaurant at VanDusen Garden

THE SCENE

Restaurant owners Chris Chatten and Amandah Delain named the restaurant after two Vancouver landmarks — the old golf course that was on the VanDusen Botanical Garden site in the 40s and 50s, and the surrounding neighbourhood, Shaughnessy. Chatten and Delain teamed with several renowned interior designers to create the airy, yet intimate ambiance and décor of the restaurant. The slate and wood floor reclaimed from a 1910 warehouse adds old-world charm and warmth. Intimate booths line the back wall and are peered down upon by a large, beautiful Rhododendron painting. French doors provide the opportunity for a private group dining room while maintaining the bright, openness of the restaurant. White shingles on the walls, ample skylights, and potted plants bring the lush Botanical Garden indoors, while floor-to-ceiling sheer drape swaths add drama, elegance and intimacy to the room.

DON'T-MISS DISHES

  • Caribbean Spiced Prawn Satay — chipotle & lime aioli, watermelon and jicama salsa, napa cabbage coleslaw
  • Chive Crusted Beef Tenderloin — madeira dijon jus, sautéed green beans with toasted pinenuts, aged cheddar twice baked potato
  • Orange and Ginger Braised King Kole Duck Confit — fall fruit chutney, parsley and sage potato gnocchi, parmesan brussel sprouts
  • Scallop and Tiger Prawn Linguine — hoisin, fresh cilantro, roasted cashews
  • Black and White Callebaut Chocolate Pyramid — milk chocolate and pistachio mousse centre

BRAGGING RIGHTS

The menu, created by Chef David William Grimshaw, perfectly complements the surroundings — innovative, contemporary, and West Coast. Only the highest quality local ingredients are selected to serve — many of the organic vegetables come from the Garden itself. Changing with the seasons, the menu reflects the fresh produce, meats and fish plentiful at that time.

Special group menus are available and can be created for the unique needs of any group or event.
